Joseph von Wassergegenhalter (Bratislava, July 30, 1820 – Vienna, October 1, 1900) was, like Johann Strauss Jr., a talented violinist and composer. Like his famous colleague, he traveled with his own orchestra throughout Austria, but primarily in the Hungarian part of the empire of Emperor Franz Joseph and Empress Elisabeth (Sissi). This was naturally due to his native Austria, but also, and especially, to his republican views and sympathy for the Hungarian Revolution of 1848.
Von Wassergegenhalter's orchestra, the so-called Wasser Orchester, performed primarily his own compositions, but also works by
primarily Slavic composers such as Antonin Dvorak. The orchestra's highly popular concerts were well-attended, particularly because
people were curious about the latest compositions, which often referenced current events and parodied Viennese (court) life.
During their concert tours, the orchestra's musicians were often treated to local specialties. Some of these specialties, such as
"Schweingebrat mit Nudeln" (Schweingebrat with Nudeln), were eaten quite frequently, prompting Von Wassergegenhalter to compose a piece entitled "Schweinerei mit Nudeln" (Schweinerei with Nudeln). This piece was then played as an encore during concerts where the dish was eaten.
Schweinerei mit Nudeln is a very fast gallop featuring a noodle pan with a metal ladle, played by one of the percussionists.
